I have 26 currently, but there are quite a few I could kill without ill-effect -- like Picassa Media Detector and the stoopid MS Messaging thingy.
My work computer has a much longer list. Probably in the high 50s.
For process research, I often use http://www.answersthatwork.com. They have a nice library of legit / malware processess... although not everything is in there.

I know what less than 20 of these do.
At one point I tried shutting down (and in many cases deleting altogether) every process I couldn't find a definitive purpose for (I still only got it down to like 51), and I ended up screwing things up pretty bad. I only have 512 ram on my laptop, and it's really killing me. Anyone have any good XP tweak resources?
That's a shot from a particularly epic freezup I had a couple weeks ago. Took the machine about 45 minutes to recover.
My laptop is less than 6 months old.
